Adzuki Bean & Asparagus Salad

To those who say salads can’t be fulfilling, this one proves them wrong. It will keep your stomach full and taste buds happy. 

It is also packed with magnesium—one of the important minerals for alleviating stress, sharpening mental focus, and improving sleep. Therefore, it makes the perfect work lunch date because who doesn’t need to perk up the brain and shed some office stress by noon? 

Ingredients: (Serves 2)

  • 1 bunch thin asparagus, rough ends trimmed off
  • ¼ cup extra virgin olive oil
  • Zest and juice from 1 lemon, freshly squeezed
  • ½ bunch parsley, chopped
  • 1 15oz can of adzuki beans, drained and rinsed (Eden Organics is great)
  • 2 cups baby arugula
  • Salt (Celtic Grey, Himalayan, or Redmond Real Salt) and black pepper to taste

Directions:

  1. Bring a pot of water to a boil.
  2. Blanch asparagus for 5-8 minutes until tender.
  3. Remove from water and pat dry with paper towels.
  4. Chop into 1-inch pieces.
  5. Whisk the olive oil, lemon, and parsley together. 
  6. In a bowl (or Tupperware is on the go), add everything in, sprinkle the dressing (olive oil, lemon, and parsley), and season with salt and pepper.
